Why it works: Nutmeg and pepper match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Veal Loaf

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, combine the chopped veal, softened butter, crushed crackers, grated nutmeg, black pepper, coarse sea salt, and eggs. Mix the ingredients well until fully combined.

Shape and bake

  1. Shape the mixture into a loaf and place it in a baking dish. Add water around the loaf in the baking dish.

  2. Bake for 2 hours, ensuring the loaf is cooked through.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and sets into a firm, sliceable texture when cooked.
Eggs
Bind the meat and crumbs together and help the loaf hold its shape as it sets.
Crackers
Absorb moisture and add bulk, keeping the loaf tender rather than dense.
Butter
Adds fat and richness, contributing moisture and a softer bite to the loaf.

The step that matters

Bake until cooked through. Ground or chopped meat loaves need to reach a safe internal temperature all the way through. Covering the surface with water in the pan helps keep the loaf moist during the long bake, while the centre must still be checked for doneness.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, butter, pepper, egg):

  1. Parsleyfits better
  2. Sagefits about as well
  3. Nutmegthe original
  4. Tarragonfits about as well

Fit is the average pairing score against veal, butter, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
