What each ingredient does

Hard-boiled eggs
Provide the whites that hold the filling and the yolks that form the creamy base.
Butter
Adds richness and a smooth, silky texture to the mashed yolks.
Cream
Loosens the mashed yolks into a smooth, spoonable filling.
Raw egg
Acts as a binder so the bread crumbs stick to the stuffed eggs.
Bread crumbs
Form a crisp golden coating that browns during frying.
Lard
Conducts heat for frying and promotes browning of the crumb coating.

The step that matters

Fry the eggs in hot lard until golden brown. The coating must be fully set and evenly golden before the eggs are removed. Hot fat sets the crumb crust quickly and browns it through Maillard reactions, while lower heat lets the coating absorb grease and turn soggy.
