Stuffed Peppers

Ingredients

Directions

Prepare the peppers

  1. Cut the tops off the peppers and remove the seeds.

  2. Soak the peppers in salt water overnight.

Make the cabbage filling

  1. Sprinkle ¼ cup salt over the chopped cabbage and let it stand for 1 hour.

  2. Squeeze out the excess salt water from the cabbage.

  3. Add the celery seed, mustard seed, and grated horseradish to the cabbage and mix well.

  4. Stuff the peppers tightly with the cabbage mixture, being careful not to break them.

  5. Turn the stuffed peppers upside down until all are filled.

Pickle and seal

  1. Pack the peppers into a crock with the open ends facing up.

  2. Boil 2 quarts of vinegar with 3 cups of sugar and pour it over the peppers.

  3. Let the peppers stand overnight, then repeat this process for 3 consecutive mornings.

  4. After the final day, pack the peppers into Mason jars and pour hot vinegar over them, then seal.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green peppers
Hold the stuffing and soften slightly during soaking, becoming tender while keeping their shape.
Cabbage
Forms the crisp, bulky filling that stays firm after the vinegar brine.
Vinegar
Provides the acidity that preserves the peppers and gives the pickle its sharp flavor.
Sugar
Balances the sharpness of the vinegar, adding sweetness to the brine.
Horseradish
Adds a sharp, pungent heat that mellows during pickling.
Mustard seed
Contributes a sharp, pungent flavor to the cabbage filling.

The step that matters

Squeezing the salted cabbage. Salting draws water out of the cabbage. If it is not squeezed well, excess liquid dilutes the vinegar brine and leaves the filling soggy and less crisp.

Swap the celery

How well each one fits the dish's main ingredients (pepper, cabbage, mustard, horseradish, vinegar, sugar):

  1. Dillfits better
  2. Tarragonfits better
  3. Capersfits better
  4. Celerythe original

Fit is the average pairing score against pepper, cabbage, mustard, horseradish, vinegar, sugar. Candidates are from the same food group and used in at least 100 recipes.
