Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Swells and absorbs the milk, forming a thick base that holds the croquettes together.
Milk
Cooks into the rice to give a creamy, moist interior.
Egg yolks
Enrich the mixture and help it set, adding richness and a tender texture.
Bread crumbs
Form a crisp, golden outer coating when fried.
Flour
Thickens the orange sauce so it becomes smooth and syrupy.

The step that matters

Cook the rice in the double boiler until it absorbs the milk. Gentle, indirect heat lets the rice absorb the milk slowly without scorching on the bottom. The mixture must be thick enough to hold its shape when cooled, or the cylinders will fall apart during dipping and frying.
