What each ingredient does

Green tomatoes
Form the bulk of the pickle and soften into tender pieces during the long simmer.
Vinegar
Provides the acidity that preserves the pickle and gives it its sharp flavour.
Sugar
Balances the sharpness of the vinegar and adds sweetness to the pickle.
Coarse sea salt
Draws water out of the tomatoes and peppers, firming them and removing excess liquid.

The step that matters

Squeezing the salted tomatoes. Salt draws water out of the vegetables overnight. Squeezing removes the excess salty liquid, so the pickle is not overly salty and the vegetables keep a firmer texture in the vinegar.
