What each ingredient does

Sour cherries
Provide the fruit flavor and bulk of the sauce, releasing juice as they soften.
Vinegar
Adds acidity that softens the cherries and gives the sauce its tangy bite.
Sugar
Draws moisture out of the cherries and balances the sharp acidity with sweetness.

The step that matters

Stirring the mixture daily during the week. Stirring keeps the sugar dissolving evenly into the juices drawn from the cherries, so the mixture does not separate or develop uneven sweetness while it rests.
