Almond Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the pulverized sugar and butter.

  3. Add the sweet milk and mix well.

  4. Sift the flour and baking powder together three times, then gradually add to the mixture.

  5. Beat the egg whites until stiff and fold them into the batter along with almond flavor if desired.

  6. Pour the batter into prepared cake pans and bake until golden.

Make the filling and assemble

  1. For the filling, mix sweet cream with enough pulverized sugar to make a spreadable paste.

  2. Stir in the chopped almonds, reserving some for decoration.

  3. Once the cake layers are cool, spread the filling between them and top with reserved almonds.

What each ingredient does

Butter
Creams with the sugar to give the cake richness and a tender crumb.
Egg whites
Whipped until stiff to trap air, helping the cake rise and stay light.
All-purpose flour
Provides the structure that holds the cake together as it bakes.
Baking powder
Releases gas in the batter so the cake rises in the oven.
Blanched almonds
Add nutty flavor and crunch to the filling and the decoration on top.

The step that matters

Folding in the stiff egg whites. Stiff whites hold air that lifts the batter. Overmixing or deflating them during folding makes the cake dense and flat, so fold gently until just combined.
