Devil Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. In a bowl, mix 1 cup brown sugar, 2 cups flour, ½ cup thick milk, 1 teaspoon baking soda, ½ cup butter, 2 egg yolks, and 1 teaspoon vanilla.

  2. In another bowl, combine 1 cup brown sugar, ½ cup thick milk, and 3 tablespoons cocoa. Mix well.

  3. Add the second mixture to the first and stir until combined.

Bake and finish

  1. Pour the batter into a greased baking pan.

  2. Bake in a moderate oven at 350°F (175°C) until a toothpick comes out clean.

  3. Ice with chocolate icing and add shellbark kernels if desired.
