Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. Whip the egg whites with a pinch of salt until half whipped.

  2. Add the cream of tartar and continue whipping until very stiff.

  3. Gradually add the sugar while beating until well combined.

  4. Flavor the mixture as desired.

  5. Gently fold in the sifted flour.

  6. Sift the flour 4 times and the sugar 2 times before adding.

Bake

  1. Pour the batter into an ungreased tube pan.

  2. Bake for 30 to 40 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into foam that gives the cake its light, airy structure.
Sugar
Sweetens the cake and helps stabilize the whipped egg white foam.
Flour
Provides light structure once folded in and set by baking.
Cream of tartar
Stabilizes the egg white foam so it whips stiffer and holds its volume.

The step that matters

Fold in the flour gently. Overmixing knocks air out of the whipped egg white foam, so the cake rises less and turns dense. Folding keeps the foam intact.
