Mountain Ash Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Preheat the oven to 350°F (175°C).

  2. Cream together the sugar and butter until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Stir in the baking powder and sweet milk.

  5. Gradually add the flour, mixing until smooth.

  6. Divide the batter into two greased cake pans.

  7. Bake for 25-30 minutes or until a toothpick comes out clean.

  8. For the filling, grate the orange and mix with the powdered sugar to make orange icing.

  9. Ice the first layer with the orange icing.

  10. Make a white icing and spread it over the orange icing on the cake.
