What each ingredient does

Beans
The main food; long, steady boiling softens them until they are tender.

The step that matters

Keep the jars covered and boil steadily. The water must stay high enough to cover the jar tops and the boil must stay steady for the full time. Sustained heat reaches the beans throughout the jar and kills spoilage microorganisms, so any drop in water level or heat can leave the beans under-processed.
