What each ingredient does

Tea
Gives the punch its tannin-based astringency and depth of flavour when steeped in hot water.
Lemons
Provide acidity that balances the sweetness and brightens the flavour.
Oranges
Add sweetness and citrus aroma along with juice for body.
Pineapple
Adds sweetness, juiciness and tropical flavour to the punch.
Ginger ale
Adds carbonation and sweet ginger flavour for a lighter, fizzy finish.

The step that matters

Let the rinds and tea steep for 15 minutes. Steeping in hot water extracts flavour and tannins from the tea and citrus oils from the rinds. Stopping early gives a weak, thin punch, and steeping too long can make it bitter.
