Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Beat the yolks and sugar until creamy.

  3. Beat the egg whites until stiff.

  4. Mix the egg whites with the yolks and sugar.

Make the batter

  1. Gradually sift in the flour and add the extract, stirring just to combine.

  2. Pour the batter into buttered pans lined with paper, about 1 inch deep.

  3. Sprinkle a little pulverized sugar on top.

Bake

  1. Bake for 25 to 30 minutes, covering with paper if it gets too hot.

  2. Check for doneness with a skewer; it should come out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites and yolks provide the air and structure that lift the sponge.
Sugar
Sweetens the cake and helps stabilize the whipped egg foam.
Flour
Forms the set crumb structure once the batter bakes.

The step that matters

Folding in the flour. Sift the flour in gradually and stir only until combined. Overmixing knocks air out of the whipped egg foam, which leaves the sponge dense instead of light.
