Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Provides fat and richness, giving the sauce a smooth, creamy body.
Sugar
Sweetens the sauce and helps it beat up light and smooth with the butter.
Egg
Yolk enriches and thickens the sauce, while the beaten white lightens its texture.

The step that matters

Folding in the egg white. Beaten egg white holds air, so it should be folded in gently to keep the sauce light. Vigorous stirring deflates it and makes the sauce heavier.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, sugar, egg):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Capersfits less well
  4. Parsleyfits less well

Fit is the average pairing score against butter, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
