Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked chicken or turkey
Provides the main body and savoury flavour of the filling.
Egg yolks
Bind the filling and help it set firmly when cooked.
Butter
Adds richness and carries the flavour of the onion into the filling.
Flour
Thickens the broth so the filling holds its shape for shaping.
Broth
Moistens the meat and helps form a cohesive, creamy mixture.
Mushrooms
Add earthy flavour and moisture to the filling.

The step that matters

Cool the filling fully before shaping. A chilled, firm mixture holds its shape during shaping and coating. If it is still warm or soft, the croquettes can slump and may crack or leak oil while frying.

Swap the onion
