What each ingredient does

Stale bread
Toasting browns the bread, giving the water its deep, toasty flavor and color.
Boiling water
Hot water draws the toasty flavor and color out of the bread and becomes the drink.

The step that matters

Toasting the bread. Browning the bread develops rich, toasty flavors through caramelization and Maillard reactions. Burnt bread turns bitter, and that bitterness passes into the water.
