Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the main body of the dish and carries the creamy sauce.
Butter or drippings
Provides fat that carries flavour and helps form the roux base.
Flour
Thickens the milk into a smooth, coating sauce when cooked with fat.
Milk
Forms the liquid base of the sauce, giving it a creamy texture as it thickens.
Toasted bread
Gives a crisp, absorbent base that holds the hot cauliflower sauce.

The step that matters

Stir the milk in gradually. Adding milk slowly while stirring keeps the flour dispersed, so the sauce thickens smoothly instead of forming lumps.
