Macaroni with Brown Sauce

Ingredients

Directions

Cook the macaroni

  1. Break the macaroni into pieces two inches long.

  2. Boil the stock or water in a pot.

  3. Add the macaroni to the boiling liquid and cook for 30 minutes.

  4. Drain the macaroni in a colander, saving the liquid.

Make the brown sauce

  1. Melt the butter or drippings in a frying pan.

  2. Add the flour and mix until smooth.

  3. Gradually stir in ½ pint of the reserved stock or water and cook until it boils.

  4. Add the cheese and then the drained macaroni, letting it boil once.

  5. Season with salt and pepper to taste, then serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Macaroni
Forms the bulk of the dish and gives it its main body and chew.
Flour
Thickens the butter and stock into a smooth sauce when cooked together.
Butter or drippings
Carries the flour and adds richness and flavor to the sauce.
Cheese
Melts into the sauce, adding savory flavor and a creamy texture.

The step that matters

Stirring the stock into the flour roux. Adding the liquid gradually while stirring keeps the flour dispersed, so the sauce thickens smoothly without lumps.
