What each ingredient does

Mackerel
The main protein; its firm flesh holds together through soaking and poaching.
Butter
Adds fat and richness, helping keep the cooked fish moist and flavourful.
Sliced lemons
Adds acidity that cuts the richness of the oily fish.

The step that matters

Reheating the water after the kettle pour. Fish proteins tighten and toughen when overheated, so the fish can turn dry and firm if the water boils too hard or too long. Keep the heat gentle once it returns to a boil.
