To Boil a Turkey

Ingredients

Directions

  1. Make a stuffing with chopped bread, butter, cream, oysters, and yolks of eggs.

  2. Sew the stuffing into the turkey.

  3. Dredge flour over the turkey.

  4. Place the turkey in a pot with enough cold water to cover it and add salt.

  5. Bring to a simmer and cook for 2.5 hours, skimming occasionally.

  6. For a nicer presentation, wrap the turkey in a cloth dredged with flour.

  7. Serve with drawn butter mixed with some oysters.
