Why it works: Parsley and celery match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,810 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Beefs Heart

Ingredients

Directions

Prepare the heart

  1. Wash the beef heart well and cut it into half-inch squares.

  2. Stew the heart pieces in enough water to cover them for 10 minutes.

  3. Add a little coarse sea salt to the water to draw out the blood, discarding any scum that rises.

  4. Remove the meat, strain the liquid, and return the chopped heart to the liquid.

Stew and serve

  1. Add the sliced onion, ketchup, parsley, chopped celery, cayenne pepper, and butter.

  2. Stew until the meat is very tender.

  3. Add the browned flour to thicken, boil once, and serve.

What each ingredient does

Beef heart
Provides the main meat, which becomes tender through long, gentle stewing.
Butter
Adds richness and fat, carrying flavour and giving the stew a smoother mouthfeel.
Browned flour
Thickens the cooking liquid as its starch swells when heated.
Onion
Adds savoury depth and aroma as it softens and sweetens in the stew.
Celery
Contributes aroma and a mild savoury background flavour to the stew.

The step that matters

Stew until the meat is very tender. Heart is dense, tough muscle, and it needs a long, gentle simmer for collagen and connective tissue to break down. Stopping early leaves the meat chewy, and a hard boil can toughen it.

Swap the onion
