Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

Make the loaf

  1. In a large bowl, combine the chopped veal, salt, pepper, cloves, cinnamon, rolled crackers, egg, and butter. Mix thoroughly until well combined.

  2. Press the mixture into a baking tin.

Bake and serve

  1. Bake for 2.5 hours.

  2. Allow to cool completely before slicing for serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and provides its meaty structure and flavour.
Egg
Binds the mixture so it holds together when sliced.
Crackers
Absorb moisture and add bulk, helping the loaf stay tender and hold its shape.
Butter
Adds fat for moisture and a richer texture in the baked loaf.

The step that matters

Allow to cool completely before slicing. Baked meat mixtures are soft while hot and their proteins set as they cool. Slicing too early can cause the loaf to crumble or tear, so letting it cool fully helps it hold clean slices.

Swap the cinnamon

How well each one fits the dish's main ingredients (veal, pepper, clove, egg, butter):

  1. Nutmegfits better
  2. Parsleyfits about as well
  3. Allspicefits about as well
  4. Cinnamonthe original

Fit is the average pairing score against veal, pepper, clove, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
