Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the dish, setting into a firm, sliceable jelly as it cools.
Eggs
Bind the chopped meat together and help the roll hold its shape when sliced.
Rolled crackers
Absorb liquid and help bind the mixture, giving it a firmer texture.
Butter
Adds richness and moisture to the meat and helps the surface brown.
Cream
Adds moisture and richness, softening the texture of the meat.

The step that matters

Cook slowly for 2 hours. Slow, gentle cooking with occasional added water keeps the meat moist and tender rather than dry and tough. Gentle heat lets collagen soften without toughening the proteins.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, pepper, egg, butter, cream):

  1. Nutmegthe original
  2. Parsleyfits about as well
  3. Tarragonfits less well
  4. Sagefits less well

Fit is the average pairing score against veal, pepper, egg, butter, cream. Candidates are from the same food group and used in at least 100 recipes.
