What each ingredient does

White spine cucumbers
Form the bulk of the salad and provide its crisp, fresh texture.
White onions
Add sharpness and aroma that mellow during the long rest.
Green peppers
Contribute crunch and a grassy, fresh flavor.
Black mustard seed
Adds sharp, pungent heat and a seeded bite to the pickle.
White mustard seed
Adds milder pungency and aroma to the pickle.
Cold vinegar
Acidifies the mixture, preserving it and giving it its tang.

The step that matters

Draining the salted mixture. Salt draws water out of the vegetables by osmosis. Draining for the full 24 hours removes that liquid so the cucumbers stay crisp and the vinegar is not diluted once it is added.
