Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ripe tomatoes
Provide the main body, flavor, and bulk of the ketchup.
Coarse sea salt
Draws moisture out of the tomatoes and seasons them during the resting period.
Vinegar
Adds acidity that gives the ketchup its tang and helps preserve it.

The step that matters

Boil until it begins to settle at the bottom of the kettle. Long boiling evaporates water and thickens the tomato pulp. Stopping too early leaves the ketchup thin, while the pulp can scorch on the bottom if it is not stirred during boiling.

Swap the tomato

How well each one fits the dish's main ingredients (pepper, clove, vinegar):

  1. Capsicumfits better
  2. Mustardfits better
  3. Shallotfits better
  4. Tomatothe original

Fit is the average pairing score against pepper, clove, vinegar. Candidates are from the same food group and used in at least 100 recipes.
