Ingredients
Directions
Make the curd
Pour boiling water over the thick milk in a pan, stirring while you pour.
Once the milk separates from the whey and appears cooked, let it settle for 1-2 minutes.
Pour off most of the water and whey; if not sufficiently cooked, add more hot water.
Drain and shape
Set the pan on edge and use a spoon or your hand to draw the curd to the upper side, pressing out as much water as possible.
If desired, let it stand in cold water for a few moments.
When squeezed dry, work the curd fine by rolling it between your hands.
Season
Add salt and cream to taste.

What each ingredient does
- Thick milk
- Its proteins separate into curds when heated with hot water, forming the cottage cheese.
- Cream
- Adds fat and richness to the finished curd.
The step that matters
Pressing out the water. Curd holding too much water will taste thin and spoil quickly. Squeezing it dry concentrates the curd and gives it a firmer texture.
