Lime Water

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the lime

  1. Place the lime in a large stone jar or unpainted pail.

  2. Slowly pour the hot water over the lime, stirring thoroughly.

Settle and bottle

  1. Let the mixture settle, then stir again two or three times over the next 24 hours.

  2. Carefully bottle the clear liquid that can be poured off.

What each ingredient does

Fresh unslacked lime
Reacts with water to form calcium hydroxide, which dissolves to make the alkaline liquid.

The step that matters

Carefully bottle the clear liquid. Undissolved lime particles settle as sediment. Calcium hydroxide dissolves only slightly, so the clear liquid above the sediment is the usable solution. Disturbing the sediment or pouring too early clouds the liquid with solids.
