What each ingredient does

Eggs
Bind the mixture and help the patties hold their shape while cooking.
Mashed potatoes
Add body and softness, helping the patties stay moist inside.
Butter
Adds richness and fat, contributing flavour and a tender texture.
Chicken broth
Moistens the chopped chicken into a pulp and adds savoury flavour.

The step that matters

Frying in boiling lard until golden brown. The fat must be hot enough to brown the egg and cracker coating quickly. If the lard is too cool, the patties absorb more oil and turn greasy before the coating sets and browns.
