What each ingredient does

Flour
Thickens the sauce as it cooks, and browning it adds a deeper, nutty flavor.
Butter
Carries the aromatics and adds richness to the sauce base.
Mushrooms
Add earthy flavor and a tender, savory body to the sauce.
Sherry wine
Adds acidity and a layer of sweet, nutty aroma to the sauce.
Beef stock
Adds savory depth that carries the sauce's meaty flavor.

The step that matters

Browning the flour. Flour stirred in butter must cook until it turns brown to lose its raw starchy taste and develop flavor. Stopping early leaves the sauce pasty, while cooking too long can scorch it and make it bitter.

Swap the onion

How well each one fits the dish's main ingredients (butter, sage, thyme, flour, beef, nutmeg, sherry):

  1. Shallotfits better
  2. Leekfits better
  3. Parsnipfits better
