Beef Ob Veal Loaf

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make and bake the meatloaf

  1. In a large bowl, combine the ground beef or veal, salt pork, crushed crackers, dissolved isinglass, butter, salt, pepper, cloves or nutmeg, and eggs. Mix well until all ingredients are thoroughly combined.

  2. Transfer the mixture to a loaf pan and bake for 1 hour.

  3. Let cool before slicing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground beef or veal
Provides the main body and rich meaty flavour of the loaf.
Eggs
Bind the mixture and help it set as it bakes.
Boston crackers
Absorb moisture and soften the texture, keeping the loaf tender.
Salt pork
Adds fat that keeps the loaf moist and flavourful during baking.
Cooper's isinglass
Gelatin-like binder that helps the loaf hold together and stay moist.

The step that matters

Mix until thoroughly combined. Mixing evenly spreads the binders, fat and seasonings through the meat. Overworking ground meat, however, can make the loaf dense and firm, so stop once everything is just combined.

Flavor stand-ins for the clove

How well each one fits the dish's main ingredients (beef, pork, butter, pepper, egg):

  1. Parsleybetter flavor fit
  2. Thymebetter flavor fit
  3. Nutmegbetter flavor fit
  4. Clovethe original

Fit is the average pairing score against beef, pork, butter, pepper, egg. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
