What each ingredient does

Calf's liver
Is the main meat, which becomes tender and flavorful during slow cooking.
Onions
Release sweetness and moisture as they soften, flavoring the liver and the pan juices.
Salt pork
Adds fat and savory flavor that bastes the liver as it cooks.
Vinegar
Adds acidity that helps tenderize the liver and brightens the flavor.
Claret
Adds wine acidity and aroma to the cooking liquid.

The step that matters

Cook over low heat from 2:30 PM until 6 PM. Liver turns tough and grainy when overcooked, so gentle, low heat over a long period keeps it tender while the connective tissue softens. Watch closely for doneness.
