Ingredients
Directions
Prepare
Wash, peel, and cut the cucumbers into strips, removing the seeds, then cut the cucumbers into small dice.
In a large bowl, combine the diced cucumbers, chopped onions, chopped peppers, mustard seeds, and celery seed.
Add the coarse sea salt and mix well.
Place the mixture in a cotton bag and hang to drain for 24 hours.
Pickle and age
After draining, add enough clear cold vinegar to cover the mixture.
Transfer to stone jars and seal nearly air‑tight.
Let it sit for 6 weeks before using.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Cucumbers
- Provide the main crisp, watery vegetable body of the salad.
- White onions
- Add sharp aromatic flavour that mellows during the long pickling rest.
- Coarse sea salt
- Draws water out of the vegetables, firming them and concentrating flavour.
- Mustard seeds
- Contribute pungent, sharp flavour that develops as the salad sits.
- Vinegar
- Acidifies the mixture, preserving it and giving it tang.
The step that matters
Draining the salted mixture for 24 hours. Salt draws water out of the cucumbers and onions. Draining removes that liquid so the vegetables stay crisp and the vinegar does not get diluted before the long rest.
Swap the onion
