What each ingredient does

Green tomatoes
Form the bulk of the pickle and, once salted and drained, give it a firm, sliceable texture.
Coarse sea salt
Draws water out of the tomatoes, firming them and concentrating their flavor before cooking.
Brown sugar
Adds sweetness and balances the sharp acidity of the vinegar.
Vinegar
Provides the acidity that preserves the pickle and gives it its tangy flavor.
Red peppers
Add sweetness, color, and body to the mixture as it cooks down.
Onions
Add savory depth and body as they soften during the long simmer.

The step that matters

Boil slowly for 3 hours. A long, gentle simmer lets the tomatoes soften and the spices and vinegar blend into the sugar-rich mixture. Boiling too hard can break the slices down into mush and scorch the sugars on the bottom of the kettle.

Swap the mace

How well each one fits the dish's main ingredients (tomato, ginger, allspice, clove, cinnamon, horseradish, pepper):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Turmericfits better
  4. Macethe original

Fit is the average pairing score against tomato, ginger, allspice, clove, cinnamon, horseradish, pepper. Candidates are from the same food group and used in at least 100 recipes.
