Why it works: Quince and lemon match in chemistry and in kitchens. They rank in the top 11% of all ingredient pairs, and cooks put them together in 336 recipes. Both carry trans-2-hexenal, which smells green, leafy. The science ↓
To Pee Serve Quinces
Ingredients
Directions
Pare, core, and quarter the quinces.
Place the parings, cores, and seeds in a preserving kettle and cover with water.
Boil slowly for 20 minutes, then strain the mixture.
Return the water to the kettle and add the quinces a few at a time.
Simmer gently until tender, about 5 to 10 minutes, then lay them on a dish.
Add sugar and a little warm water to the kettle and boil until clear.
Add all the quinces and boil without stirring until they become a clear garnet, about 1 hour.
Slice the lemons thinly, remove the seeds, and add them a few minutes before finishing.
