Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hops
Adds bitterness and aroma, and helps keep the liquid from spoiling.
Brown sugar
Feeds fermentation and adds sweetness and depth of flavor.
Flour
Thickens the liquid and gives the mixture body as it smooths out.
Potatoes
Add starch and moisture, giving the bread a softer, denser crumb.

The step that matters

Letting the mixture ferment in a warm place. Fermentation depends on warmth and time. In a cool spot it slows or stalls, and the mixture will not develop the expected flavor and rise.

Swap the potato

How well each one fits the dish's main ingredients (hops, sugar, flour):

  1. Mustardfits better
  2. Arrowrootfits better
  3. Parsnipfits better
  4. Potatothe original

Fit is the average pairing score against hops, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
