Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat your oven to 350°F (175°C).

  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Gradually add the flour, mixing until just combined.

  5. Add flavoring to taste and mix well.

Bake

  1. Pour the batter into a greased loaf pan.

  2. Bake for about 60 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creaming with sugar traps air, giving the cake a light, tender crumb and rich flavor.
Eggs
Provide structure as they set and add moisture and richness to the crumb.
All-purpose flour
Forms the structure of the cake once its gluten sets during baking.
Granulated sugar
Sweetens the cake and helps create a fine, airy texture when creamed with butter.

The step that matters

Adding the flour. Mixing only until just combined keeps gluten development low, so the cake stays tender rather than tough and dense.

Swap the vanilla

How well each one fits the dish's main ingredients (flour, butter, sugar, egg):

  1. Raisinfits better
  2. Vanillathe original
  3. Figfits less well
  4. Lemonfits less well

Fit is the average pairing score against flour, butter, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
