Jelly Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Beat the butter until creamy.

  3. Add the beaten yolks of the eggs to the butter.

Make the batter

  1. Beat the egg whites until frothy and mix with the sugar.

  2. Combine all mixtures together.

  3. Sift the flour with the baking powder and add to the mixture.

  4. Stir in the milk and add flavoring essence if desired.

Bake

  1. Pour the batter into a greased cake pan and bake for 25-30 minutes or until a toothpick comes out clean.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Butter and flour barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich the batter and whites, whipped to froth, add lift and an airy crumb.
Butter
Creamed butter adds richness and a tender texture to the cake.
Flour
Provides the structure that sets as the cake bakes.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Sugar
Sweetens the cake and helps it brown as it bakes.
Milk
Adds moisture and hydrates the flour to form the batter.

The step that matters

Folding the whites into the batter. Whipped egg whites trap air that gives the cake its lift. Mixing them in too vigorously knocks out that air, leaving a denser cake. Combine gently and keep the batter airy before baking.
