What each ingredient does

Tomatoes
Stewed to form the liquid base and provide acidity and body to the soup.
Okra
Shredded and cooked until tender, it thickens the soup and gives it body.
Chicken
Fricasseed in ham gravy to provide the main meat and savoury flavour.
Egg yolks
Beaten with vinegar and lemon juice and stirred in, they enrich and thicken the soup.

The step that matters

Pour the egg mixture over the chicken and add everything to the tomatoes. Egg yolks can curdle or scramble if they meet very hot liquid too quickly. Adding them gradually to the warm mixture, rather than dumping them in, helps keep the soup smooth.

Swap the onion
