Spiced Beef

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Remove all fat from the beef.

  2. In a bowl, combine the beef, crushed crackers, eggs, milk, mace, black pepper, and melted butter.

  3. Mix well and pack the mixture into a tin pan that it will just fill.

Bake

  1. Baste with butter and water.

  2. Bake for 2 hours at 300°F (150°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Round beef
Provides the main body and savoury meaty flavour of the loaf.
Crushed crackers
Absorb liquid and bind the meat so the loaf holds its shape when sliced.
Eggs
Set during baking to bind the mixture into a firm, sliceable loaf.
Milk
Adds moisture so the meat stays tender rather than dry during baking.
Ground mace
Adds a warm, aromatic spice flavour that complements the beef.
Butter
Adds richness and helps the surface brown while basting keeps it moist.

The step that matters

Packing the mixture into the pan. Packing firmly without air pockets gives an even, dense loaf that slices cleanly. Loose packing can crumble or bake unevenly.

Swap the mace

How well each one fits the dish's main ingredients (beef, egg, milk, pepper, butter):

  1. Nutmegfits better
  2. Parsleyfits better
  3. Cinnamonfits better
  4. Macethe original

Fit is the average pairing score against beef, egg, milk, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
