Why it works: Pepper and nutmeg match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Jellied Veal

Ingredients

Directions

Prepare the veal

  1. Boil the veal until tender, then chop it finely.

  2. Place the chopped veal in a mold and add the water it was boiled in.

  3. Season with salt and pepper to taste.

  4. Layer hard-boiled eggs on top for added flavor.

  5. In a bowl, mix the veal with salt, pepper, nutmeg, rolled crackers, and eggs.

  6. If the veal is thin, add butter and cream.

Shape and bake

  1. Form the mixture into a large roll and dot with bits of butter.

  2. Sprinkle pounded crackers over the roll, mixing a little with the meat.

  3. Place the roll in the oven and add a little water occasionally.

  4. Cook slowly for 2 hours.

Serve

  1. Once cooled, slice thinly and serve as a relish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold roast veal
Forms the bulk of the dish and sets into a firm, sliceable jelly as it cools.
Eggs
Bind the chopped meat together and add richness and body to the loaf.
Rolled crackers
Absorb moisture and help hold the mixture together as it bakes.
Butter
Adds fat for a richer, softer texture, used when the veal is thin.

The step that matters

Cook slowly and keep adding water. Slow, gentle heat keeps the lean veal from drying out and toughening, and occasional added water keeps the surface moist while the roll cooks through.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, pepper, egg, butter, cream):

  1. Nutmegthe original
  2. Parsleyfits about as well
  3. Tarragonfits less well
  4. Sagefits less well

Fit is the average pairing score against veal, pepper, egg, butter, cream. Candidates are from the same food group and used in at least 100 recipes.
