What each ingredient does

Cucumbers
Provide the crisp, watery vegetable base that the brine and vinegar flavour.
White onions
Add pungent sharpness and aromatic flavour that mellows during the long pickling period.
Green peppers
Contribute fresh, grassy crunch and mild bitterness to the salad.
Mustard seed
Adds sharp, pungent heat and a distinctive mustard flavour once steeped in vinegar.
Vinegar
Acts as the preserving liquid that adds acidity and sourness and keeps the salad stable.

The step that matters

Draining for 24 hours. Cucumbers and onions hold a lot of water. Draining them after salting removes excess moisture so the salad stays crisp rather than diluting the vinegar and turning soft.

Swap the onion
