Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air and give the filling a rich, tender body.
Egg whites
Whipped to stiff foam that lifts the filling and gives it a light, airy texture.
White sugar
Creamed with butter for lightness and adds sweetness to the filling.
Grated coconut
Adds bulk, moisture and a chewy texture, plus coconut flavor.

The step that matters

Fold in the egg whites carefully and bake immediately. Whipped egg whites hold air that gives the pie its lift. Folding gently preserves that air, and baking right away keeps the foam from collapsing before the filling sets.
