Italian Cream

Ingredients

Directions

Prepare the cream

  1. In a bowl, combine cream, milk, sherry wine, and vanilla. Sweeten to taste.

  2. Beat the mixture with a whip dispenser until frothy, removing the froth as it rises.

  3. Set the frothed cream in a tub of ice.

Thicken and set

  1. Dissolve the gelatin in a little warm water.

  2. Pour the dissolved gelatin into the cream and stir constantly until it thickens.

  3. Pour the mixture into molds and place in a cool area to set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides fat and richness, giving the set dessert a smooth, creamy texture.
Gelatine
Sets the liquid cream into a firm, sliceable form as it cools.
Milk
Adds moisture and body, thinning the cream slightly while keeping it rich.
Sherry wine
Contributes aroma and a mild flavour that complements the vanilla.

The step that matters

Pour the dissolved gelatin into the cream and stir constantly until it thickens. Gelatin must be fully dissolved before it goes in. If it cools and begins to set, it forms lumps that blend unevenly. Stirring constantly spreads the gelatin through the cream before it thickens, giving an even set.

Swap the vanilla

How well each one fits the dish's main ingredients (cream, milk, sherry, wine):

  1. Vanillathe original
  2. Strawberryfits about as well
  3. Applefits less well
  4. Pineapplefits less well

Fit is the average pairing score against cream, milk, sherry, wine. Candidates are from the same food group and used in at least 100 recipes.
