Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat your oven to 350°F (175°C).

Make the batter

  1. In a large bowl, cream together the butter and sugar until light and fluffy.

  2. Add the eggs one at a time, mixing well after each addition.

  3. Stir in the flour and mace, and mix until combined.

  4. Fold in the raisins, currants, mixed peel, and almonds.

  5. Add a splash of rose water and brandy to taste.

Bake

  1. Pour the batter into a greased cake pan and smooth the top.

  2. Bake for about 1.5 to 2 hours, or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with the sugar to trap air, giving the cake a tender, rich crumb.
Eggs
Bind the batter and add structure as the cake sets in the oven.
Flour
Forms the main structure of the cake as the batter sets while baking.
Sugar
Creams with the butter for a light texture and adds sweetness and browning.
Raisins
Add moisture and chewy sweetness throughout the cake.

The step that matters

Bake until a toothpick comes out clean. Eggs and flour set as the batter bakes, and a dense fruit cake can look browned outside while still wet in the center. Testing the center with a toothpick confirms the structure has fully set.

Swap the mace

How well each one fits the dish's main ingredients (flour, sugar, butter, raisin, currant, almond, egg):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against flour, sugar, butter, raisin, currant, almond, egg. Candidates are from the same food group and used in at least 100 recipes.
