What each ingredient does

Raw sugar
Provides the sugar that yeast ferments into alcohol and sweetness.
Yeast
Converts sugars into alcohol and carbon dioxide during fermentation.
Raisins
Add sugars and fruit flavour to feed the fermentation.
Isinglass
Clears the wine by settling suspended particles out of it.
Lemons
Add acidity and bright citrus flavour to balance the sweetness.

The step that matters

Stir until fermentation has ceased. Stirring keeps yeast in contact with sugar and oxygen-free mixing is avoided only by covering. Stopping early leaves residual sugar that can keep fermenting in the bottle, so the wine may be unstable or cloudy.

Swap the raisin

How well each one fits the dish's main ingredients (ginger, sugar, lemon, orange):

  1. Limefits better
  2. Mangofits better
  3. Blackberryfits better
  4. Raisinthe original

Fit is the average pairing score against ginger, sugar, lemon, orange. Candidates are from the same food group and used in at least 100 recipes.
