To Dress Crab

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dressing

  1. Melt butter in a saucepan and sauté shallots and parsley until soft.

  2. Add sweet herbs and broth (or water) and boil for a few minutes.

  3. Remove the herbs and stir in bread crumbs, sweet oil, sherry, lemon juice, cayenne pepper, and salt.

Fill and bake

  1. Add the crab to warm it through, then fill the crab shell with the mixture.

  2. Grate additional bread crumbs over the top and place in a 400°F (200°C) oven for a few minutes to brown.

What each ingredient does

Bread crumbs
Absorb the liquids and give the dressing a soft, moist body that holds its shape.
Butter
Adds richness and carries flavor while softening the shallots and parsley.
Shallots
Add a mild, sweet onion flavor that deepens as they soften in butter.
Sherry
Adds acidity and aromatic depth that brightens the rich crab mixture.
Sweet oil
Contributes fat for moisture and a smooth, rounded mouthfeel.

The step that matters

Browning the top in the oven. Bread crumbs brown through dry heat and surface sugars and proteins reacting. Watch closely, because a few minutes at 400°F can turn them from golden to burnt quickly.

Swap the shallot

How well each one fits the dish's main ingredients (parsley, butter, bread, sherry, lemon, pepper):

  1. Shallotthe original
  2. Carrotfits about as well
  3. Capsicumfits about as well
