Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt
Draws moisture out of the meat and preserves it against spoilage during curing.
Saltpetre
Helps preserve the meat and gives cured ham its characteristic pink colour.
Molasses
Adds sweetness and a little moisture to the cure, balancing the saltiness.

The step that matters

Rubbing the cure in thoroughly. Salt and curing agents only preserve where they reach. Rubbing well, especially around the bones where meat is thickest and most likely to spoil, ensures even penetration and reduces the risk of spoilage.

Swap the apple

How well each one fits the dish's main ingredients (molasses, egg, corn):

  1. Raisinfits better
  2. Vanillafits better
  3. Figfits better

Fit is the average pairing score against molasses, egg, corn. Candidates are from the same food group and used in at least 100 recipes.
