What each ingredient does

Egg yolks
Mashed smooth, they bind the oil and vinegar into a creamy emulsified dressing.
Oil
Adds fat and richness, giving the dressing a smooth, silky mouthfeel.
Vinegar
Adds acidity that brightens the dressing and balances the richness of the yolks and oil.
Mustard
Its natural emulsifiers help hold the dressing together and add a sharp flavour.

The step that matters

Pour the dressing over the chicken just before serving. Vinegar and salt draw moisture out of the celery and chicken over time, so the salad becomes watery and limp if dressed too early. Adding the dressing at the last moment keeps the texture crisp and fresh.

Swap the celery

How well each one fits the dish's main ingredients (meat, chicken, egg, mustard, vinegar, cream):

  1. Tarragonfits better
  2. Capersfits better
  3. Garlicfits about as well
  4. Celerythe original

Fit is the average pairing score against meat, chicken, egg, mustard, vinegar, cream. Candidates are from the same food group and used in at least 100 recipes.
