Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Emulsify the oil and water into a thick, smooth dressing.
Olive oil
Provides the fat that gives the dressing its body and richness.
Lemon juice
Adds acidity that brightens the dressing and balances the richness of the oil.
Powdered sugar
Adds a little sweetness that softens the sharpness of the lemon.

The step that matters

Adding the olive oil. Oil must be added slowly, drop by drop, while stirring constantly. The egg yolk lecithin needs time to surround the oil droplets; adding oil too fast breaks the emulsion so it separates and stays runny.
