What each ingredient does

Green tomatoes
Form the bulk of the pickle, holding their shape and firm texture after salting and boiling.
Onions
Add savory flavor and bulk to the pickle mixture.
Vinegar
Provides the acidity that preserves the pickles and gives them their tang.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar.
Ground mustard
Contributes pungent, sharp flavor to the pickling liquid.

The step that matters

Salting and draining the vegetables overnight. Salt draws water out of the tomatoes and onions, firming them and leaving them less watery so the pickle stays crisp and does not dilute the vinegar brine.
